Martha Stewart Coconut Cookies

I made these today.  They were good.

I used 3.5 cups of coconut in the food processor and rolled them in sugar instead of coconut.  They were chewy and excellently coconut-ey without the stringiness of a macaroon.  They're worth trying for sure.

  1. The coconut cookies sound TERRIFIC! I will try them when I return home and to a somewhat normal (non-traveling, non-entertaining guests) routine :-)
