Whole Wheat Skillet Cookies

Been meaning to share this one for a while. I'm not sayin' that these are healthy, but they are better for you than the average cookie. And BOY they are good! Alex and I don't make a lot of things more than once, even if they are good, just because there are so many things to try out there, but I have probably made these at least a dozen times. Adapted from Heidi Swanson's similarly titled cookies (but better for you).

Ingredients:

2 3/4 cup whole wheat flour
1/4 c. cornmeal
1/4 c. ground flax meal
1 1/2 t. baking powder
1 t. baking soda
1 1/4 t. salt
1 stick butter, room temp
1/2 cup applesauce
2/3 c. brown sugar
2/3 c. white sugar
2 large eggs
2 t. vanilla
~8 oz chopped dark chocolate
~1 c. walnuts

Heat oven to 350. Butter a 10 inch 2 inch deep skillet. Mix the dry ingredients in a medium bowl. In a large bowl, beat the butter and sugars until well mixed. Add the applesauce, eggs, and vanilla and mix well. Add in the flour mixture and combine. Finally, add the chocolate and nuts. Bake 35-45 minutes. Enjoy!

Cinnamon can also be added. Once I added chocolate animal crackers and that was not bad either.

  2. You put chocolate animal crackers in them? That's so funny. Was this in addition to or instead of chocolate chips? The recipe looks delicious. I will let you know what we think!

  3. Hmm, looks good. Where do you get the ground flax meal at? and do you think you can substitute anything for it?

  4. Candy: you can get ground flax I would imagine at most major grocery stores. Walmart puts it in little brown boxes by the flour.

    Amy: I believe I used the chocolate animal crackers because I didn't have chocolate at the time, but I imagine that they would be good with chocolate too. Although it kind of goes against the "kind of healthy for you" dessert mantra.

  5. Thanks Katie. We put whole flax seed into smoothies once and our stomachs did NOT like it. I know it's supposed to be healthy, but maybe we would be better off with the ground flaxseed.

  6. Well, we made it! It was delicous! The texture was a bit gritty for me only, probably because I'm pregnant. I love the flavor of the wheat flour so I'd just hold off on the corn meal and possibly the flax or part of it. But I think the texture wouldn't be a problem if I weren't pregnant. We loved the dough! Sweets have been an issue for me. For example, one night I made my favorite brownies, ate a spoonful of batter and was done with it. Once baked, I had about 2 small bites of a cooked brownie and gave the rest of mine to Eph.
